200g whole green olives
200g whole black olives
Two fresh garlic clove, halved
½ tsp Chilli flakes
1 tsp Cumin seeds
1 tsp Coriander seeds
1 tsp Caraway seeds
1 Lemon, either fresh or pickled
1cup Olive oil.
Place the olives in a large bowl.
Top up with only the green olive brine.
Add all the other ingredients.
Mix well and store in plastic tub or glass jar.
Leave for a couple of days before tasting.
